Shells, cheese, and trees ๐Ÿš๐Ÿฅฆ One of my favorite dinners from the fall (pretty sure I had it once/week for a month or two ๐Ÿ˜‚), made a reappearance tonight for #macncheesemonday ๐Ÿ‘๐Ÿป What makes this so good (and also so unphotogenic), is stirring/smashing the avocado into the macaroni & cheese for extra creaminess ๐Ÿ™Œ๐Ÿป๐Ÿ˜‹.

Today was both exciting and exhausting (I have some fun things to share with you soon ๐Ÿค—), so itโ€™s going to be a cozy wine/chocolate/bubble bath (with a side of study) night at home ๐Ÿฅ‚๐Ÿซ๐Ÿ›€ (p.s. the canned champagne I buy at Trader Joeโ€™s is called Sofia, and itโ€™s sold in a 4-pack - I get so many questions about this!). Garlic & thyme steak with parmesan chili greens.๐Ÿ˜๐Ÿ’ช๐Ÿผ

To make the garlic thyme steak:
.
1. I used 5oz of coulotte steak sprinkled with sea salt and pepper.
.
2. I heat a pan on high heat and cooked the steaks for about 2.5-3 minutes on each side (go a little longer if you want them more cooked)
.
3. Lower the heat to medium, then add half a tablespoon butter, 2 cloves garlic, and 1-2 tablespoons thyme to the pan.
.
4. Tilt the pan and keep basting the steaks with the oil for about another minute.
.
5. ๐Ÿ‹๐Ÿ— Grilled Lemon Chicken๐Ÿ˜ ~
1 lb. boneless chicken breast
Juice of 1 lemon
1/2 cup extra virgin olive oil
1/2 tsp. salt
1/4 tsp. ground black pepper
1/4 tsp. garlic powder
Add lemon juice, olive oil, salt, pepper and garlic powder to a shallow bowl. Beat vigorously with a fork to combine into a dressing. Cut each breast in half to make 4 even pieces about 1/2 inch thick. Add the chicken to the dressing and let marinate for at least 20 mins. flipping half way through. Grill 5-7 minutes each side or bake on 400F for 25-30 mins. flipping half way through or until golden brown.

๐Ÿ…๐Ÿง€ Parmesan Tomato.
Cut a large tomato in half, place each half onto baking sheet cut side up. Sprinkle with salt and pepper, then top with bread crumbs and Parmesan cheese. Drizzle with olive oil and bake for 20 mins. on 400 until cheese gets melted and golden.
