  • Sourdough pancakes were the first item from the new starter. Underestimated the power of it after a feed and had a little mess to clean up after it climbed out if it’s container overnight. But this morning it was perfectly suited for these pretty breakfast babies. Ry really loved the tang and the natural leavening makes them super fluffy and light. Taste is amazing. Looking forward to watching this one mature. #starter #sourdough #levain #breakfast #blackiron #natural #gfb

  • When this came out of the oven my first thought was “long boiiii”. I wish that was a joke. This is an 88 percent hydration country loaf that I made with my new 11 inch banneton + my newly developed oven steaming method. I gotta say, now that I’m getting into this oven steaming thing over the classic dutch oven method, I’m starting to understand how much more could be possible in bread baking at home. More to come on that.

  • Tried lots of new recipes this weekend:
    1) Marcella Hazan’s famous Tomato Sauce
    2) Daniel Patterson's poached scrambled eggs (pictured on top of one of my favorite biscuits Shirley Corriher's Touch of Grace Biscuits)
    3) ATK almost No-Knead Sourdough (thought I could cram two half loaves into the same Dutch oven. BTW it doesn't work well)
    4) Zingerman's sourdough bread. ATK version has Much better flavor from the long rise but Z's steam method is superior
    5) ATK molasses cookies - swapped in pomegranate molasses and sumac. Turned out very yummy!
    6) not pictured - Heidi Swanson's Chickpea Stew with Saffron, Yogurt and garlic. I recommend this very yummy, hardy Stew. Mmmmmm

    久しぶりにコンブチャとサワードブレッドを焼いて見た。コンブチャは一時fermentation が一ヶ月とかなりの熟成(サボっていただけです😅)パンは焼き方忘れるくらい久しぶり。天然酵母くん、ちゃんと生きててくれて良かった😭年末年始に向けて暴走を辞めて地に足のついた生活に戻していきまーす! #slowlifestyle #yoshiessourdoughbread #sourdough

  • Starter(40g) Flours (500g = 80% AP 15%WholeWheat 5% Rye.) Water (365g) Olive Oil(14g) Salt(10g) Sugar (5g) Cooked in loaf pan @ 360f for 40 Mins.

    I’m personally not into rustic chewy loaves, I like soft sandwich bread and it’s easier than shoving something on a hot stone or a Dutch oven.
