  • One Pot Lentil Pasta Puttenesca 🍝
    So easy and bursting with flavors!
    Recipe:
    •sauté 6 cloves of garlic in olive oil with 1.5 tsp dried oregano for 2 min •add 4 cups veggie broth and bring to a boil
    •add lentil paste for about 8 min
    •add 3/4 cup chopped tomatoes and 4 tbsp tomato pasta for 3 min
    •remove from heat and add 1/4 cup of fresh parsley plus 1/4 cup fresh basil
    •add 24 chopped Kalamata olives •add hot sauce or red pepper flakes to preference 😋

    Another one of my favourite recipes 🌱

    Loaded Sweet Potato Chilli with cashew cheese and guacamole 👌🏽

    Ingredients
    For the potatoes: - 2-4 medium sweet potatoes
    - 10 cherry tomatoes or a can of tomatoes - 2 tablespoons of apple cider vinegar
    - 2 cloves of garlic, peeled and chopped
    - 200g of black beans, kidney beans or adzuki beans, drained. - 1 - 2 teaspoons of brown miso paste
    -mix of spinach and lettuce leaves ⠀
    For the guacamole:
    - 1 avocado, peeled and pitted
    - Juice of half a lime
    - 1/2 a red chilli
    - 5 sun-dried tomatoes, roughly chopped

    Cashew cheese: -1/4 cup nutritional yeast
    -1/2 cup water
    -2 cups soaked cashews
    -2tbsp hemp seeds
    -2tbsp lemon

    Instructions:
    Clean and chop the sweet potato into cubes and steam.

    While the potatoes cook, peel and finely chop the garlic, quarter the cherry tomatoes and heat both in a pan with 1 teaspoon of olive oil. Add the beans, apple cider vinegar, miso and black pepper, cook for 10 minutes on a gentle heat then remove. ⠀
    For the guacamole, scoop the flesh out of the avocados and mash it with a fork. Finely chop the chilli then mix into the avocado along with the lime and sun-dried tomatoes. ⠀
    To make the cashew cheese, blend all the ingredients together till smooth.

    When the sweet potatoes are cooked, remove from the steamer and place in a bowl. Pour the beans on top along with the guacamole and cashew cheese 👌🏽😋

    Serve with spinach and lettuce. ⠀
    Enjoy this delicious plant based meal 🌱

  • PB cake brownies! I made this twice because I wanted to add more cacao to the batter. Second time around I ran out of chocolate chips so I didn’t add any on top of the batter. But I used this pic because it shows the fluffiness of the cake. Recipe is:
    Dry Ingredients:
    3/4 cup cake/pastry flour
    1/3 cup coconut sugar
    1/3 cup cacao powder
    1.5 tsp’s baking powder
    1/2 tsp baking soda
    1/4 tsp salt
    Wet Ingredients:
    2 mashed bananas
    1/4 cup peanut butter
    3/4 cup plant based milk
    1/4 + 1/8 cup of vegan chocolate chips
    Have 2 separate bowls, one for the dry ingredients and on for the wet ingredients. Once the items in each bowl have been mixed thoroughly add the wet ingredients to the dry ingredients. Fold in 1/4 of a cup of chocolate chips and make sure they are evenly distributed throughout the batter.
    Use parchment paper or grease a 8 x 8 2.25 glass baking pan and pour the batter in making sure it’s levelled. Use the remaining 1/8 of a cup of chocolate chips to pour over the top of the batter. FYI - you can obviously use more chocolate chips if you’d like!
    Pre-heat oven to 375 F.
    Bake for 18 minutes.

    Long Post Alert 🚨
    So I fractured my scaphoid about 2 weeks ago. My luck that the scaphoid is the slowest healing bone 😶. Anyways after getting many different opinions, because its the scaphoid the smart thing to do is to get a screw placed in my scaphoid to ensure/help it heal faster. My surgery is Wednesday and I’m only in a cast until the surgery then I will be in a removable wrist brace. With the screw in my wrist, lots of praying, and luck I hope to be back at 100% in 5 weeks. Please keep me in you’re prayers that the surgery goes well 🙏. 2 important lessons I learned from this. 1. Always use a bigger matt than you think you need. 2. If you suspect a fracture or anything more than a bruise, get it checked out immediately just in case. Hope to be back soon! ✊

  • When I haven’t eaten my vegetables in a few days, I feel noticeably worse. My gym performance suffers, my gut feels off, and I generally don’t have the energy I normally do. Frozen veggie mixes are a blessing for me - it gives me all the servings I need, and a variety of vitamins and minerals.
    I like to throw them on a medium-hot pan to defrost, adding soy sauce and oyster sauce when almost cooked through. Add a protein source for a full, balanced meal that will make you feel great and STUFFED!

  • I use to be someone who was a typical looking weak frail malnourished looking vegan which was not helping me promote the vegan lifestyle as much as I could potentially do.

    And one of my goals with achieving my physique is to spread the message on veganism and as we all know how many people care about how people look? Everyone.

    I have personally found way more people ask me questions about what I’m doing to achieve the body which allows me to then talk about the vegan diet and other things I’m also passionate about.

    I think with everything in life we should be pursuing something for a bigger reason than just for our own personal gains because the world, animals and people need people like us that our positive influential people that are the change we want to see in the world.

    So remember be the change you want to see in the world and shine your light bright to attract the right people into your life to help go in a positive direction that is beneficial for all.

    as you may have noticed, I rarely do any sort of "product promotion" on here,

    This is the Fleetwood Wac (lol) and it’s my fav burger everrr. It’s a Southwest version of the Big Wac; topped with spicy cheeze, grilled jalapeños, and guacamole 🙏🏼 The wizards at @greenrestaurantaz are truly magical cause the ratio of bun to patty is seriously perfect! | #GreenPhx

  • Happy #MeatlessMonday !! Today I’m sharing my vegan chili with @parkcitytv 💥 This recipe is fast, easy, and delicious! Especially for days like today when I am not feeling it in the kitchen 🤷🏼‍♀️.. #emmyapproved .

    Vegan Chili:

  • found this @miyokos_kitchen un-lox cream cheese at @wegmans yesterday and proceeded to cover a @foodforlifebaking sprouted English muffin with it this morning. 🙆🏻‍♀️ honestly sitting here trying to figure out how I felt about it. I guess I have come to this conclusion: I enjoyed it, but I wouldn’t buy it again. have you tried this? if so, what were your deep feelings on the matter?
  • found this @miyokos_kitchen un-lox cream cheese at @wegmans yesterday and proceeded to cover a @foodforlifebaking sprouted English muffin with it this morning. 🙆🏻‍♀️ honestly sitting here trying to figure out how I felt about it. I guess I have come to this conclusion: I enjoyed it, but I wouldn’t buy it again. have you tried this? if so, what were your deep feelings on the matter?
