  • Cranberry and pistachio biscotti perfect to enjoy with some coffee, this is my first time making biscotti and I was happy. I thought it was a lot of work but it wasn't that bad. I used 2 cups of flower, 1 cup of sugar, 1 tsp of vanilla extract, 1 cup of dried cranberries, 1/4 cup cup of almond milk, 2 tbs apple sauce and 1 tbs of oil . Mix all ingredients and do not overwork the dough , bake at 350• for 25 minutes take it out and cut it in pieces put them back in the oven for 8 minutes each side and enjoy it.......   • I put chopped tofu and organic broccoli florets in a pan with this red pepper eggplant sauce from @traderjoes and let it simmer. Topped with some nooch and it was epic. This sauce is so yummy. If you need to take your dinners up a notch, make your own sauces or buy some sauce and/or veggie broth.

  • Vegan Cheeseburger Pie 🍔🌱 I once read a story 16 times in a row on vacation because it was the only thing I could find. I didn't even LIKE it!
    I would read practically anything just for the sake of having something to read growing up—including a LOT of cookbooks.
    One of my favorites included a recipe for cheeseburger pie, which honestly never really made sense to me as it was neither a cheeseburger nor a pie 🤔
    but the idea came back to me a few days ago and it seemed like a fun thing to play with. It was!
    I especially love how customizable it is for a crowd—everyone can easily mix and match their favorite burger toppings: @everyday.vegan.food
    's Big Mac Sauce, grilled jalapeños, green chiles, or even just some pickles and stoneground mustard in my case. 🙌
    p.s.—I've made it with and without cheese throughout testing and honestly I prefer it without, but hamburger pie is a different dish entirely, so I've noted the cheese as optional rather than renaming it. 😉

  • [🇵🇹] RANCHO SIMPLES E VEGAN 🥕

    Esta é uma receita prática e bastante simples de preparar, uma vez que apenas é utilizado um tacho.

    É diferente do rancho original, pois o sabor é mais suave, mas foi exatamente isto que pretendi: criar um prato leve, saudável e, ao mesmo tempo, reconfortante 😊

    Ingredientes (para 6 pessoas):
    - 500g de seitan cortado em cubos pequeninos (em alternativa, utilizar nacos de soja demolhados por 20 minutos ou tofu)
    - 3 chávenas de massa integral (espirais)
    - 1 cebola picada
    - 2 dentes de alho picados
    - 2 cenouras cortadas em rodelas
    - 2 colheres de sopa de polpa de tomate
    - 1 chávena de grão de bico cozido
    - 1 chávena de ervilhas (podem ser congeladas)
    - Molho de salsa fresca picada
    - Água suficiente para a massa cozer
    - 2 colheres de sopa de azeite
    - Sal qb
    - Pimenta qb (opcional)
    - Cominhos qb

    Receita:
    1. Num tacho grande em lume médio-alto, refogar a cebola em azeite.
    2. Acrescentar o alho e a cenoura e reduzir para lume médio.
    3. Tapar o tacho e deixar cozinhar por 3 minutos.
    4. Juntar a polpa de tomate, mexer e deixar cozinhar por 2 minutos.
    5. Juntar a massa e a água e aumentar para lume alto até começar a ferver.
    6. Reduzir para lume médio (de modo a que ferva, mas não muito intensamente).
    7. Temperar com sal, pimenta e cominhos.
    8. Quando a massa estiver quase cozida, acrescentar o grão de bico e as ervilhas (poderá ser necessário aumentar o lume).
    9. Esperar 2 minutos e retificar os temperos.
    10. Juntar a salsa, misturar e deixar apurar (cerca de 3 minutos).
    11. Servir!

  • Fall is almost over and we want to savor it by enjoying this pumpkin protein oatmeal with pumpkin butter and pecans! 🍂 This breakfast is filled with warm spices, loads of nutrition, and will keep you satisfied for hours! .

    1/2 cup oats
    1 cup almond milk
    1 scoop LivWell vanilla plant protein
    1/4 cup pumpkin purée
    1 tbsp. maple syrup
    1/2 tsp. cinnamon
    1/8 tsp. cloves
    1/8 tsp. nutmeg
    Optional toppings: coconut whipped cream, pumpkin butter, and pecans .

  • Jobbade lite senare idag och kommer hem till värsta sjukstugan. 🤒 Dök snabbt in i frysen och rafsade åt mig vad jag hittade. Burgare med lite överbliven sallad. I en stor glasburk hittade jag fyra skivor ättiksgurka som simmade runt, så även de fick ta plats i burgaren. 🍔 Nu blir det till att be en stilla bön att jag själv inte trillar dit! 🙏 /Magnus 🤓

  • I’m obsessed with buckwheat because I’m convinced it’s a transformational grain.
    The main thing I want from food is super powers. I believe certain foods liberate your potential and other foods slowly drain your life force from your body.
    The main thing Shannon wants from food is entertainment. Even if she likes something, she gets bored easily.
    I don’t think one approach to food is better than the other. Shannon balances her approach with an interest in health and I balance mine by forcing myself to not go to a completely puritanical extreme.
    But I’m always searching for entertaining ways to get superfoods into her diet. I think this buckwheat porridge I made today won’t do the trick. But I’m going to try adding more fruit and cooking it a bit longer and I’ll let you know how she responds tomorrow when she tries it for breakfast.
