  • A snowstorm (while its still Fall in the South 😩) + a cold = me being sidelined for a few days.....but I’m back at it like I never left my kitchen! 💪🏽

    I love to give my kids new things to try, because how else would you know if you like it or not? 🤔 I had some great inspiration ( @hau_furniture ) and decided on trying out risotto, which they’ve never had. I paired it with pan seared pork chops and sautéed spinach, and was told it was a very “fancy” looking meal. It WAS, children. 🙄😂 Check out my recipe below! 👇🏽👇🏽👇🏽

    🍽Pan Seared Pork Chops with Creamy Parmesan Risotto and Sautéed Spinach
    ⠀⠀
    Risotto:
    4 cups chicken stock
    1 tbsp EVOO
    1 cup yellow onion, fine dice
    1 1/2 cups Arborio rice, uncooked
    1 tbsp butter
    4oz Parmesan, grated
    1 tbsp parsley, fine chop
    Salt and pepper, to taste
    ⠀⠀
    ▪️Simmer stock in a large sauce pan, but do not boil. Keep warm.
    ▪️In a separate heavy bottom pot, heat oil until smoke point, swirl and add onions. Cook until fragrant, 4-5 mins.
    ▪️Add Arborio Rice and cook for 1-2 minutes, stirring constantly.
    ▪️Add 1/2 cup chicken stock, and cook until all liquid is absorbed, stirring CONSTANTLY.
    ▪️Repeat this step, adding stock in 1/2 cup at a time and stirring like crazy until all stock except 1/4 cup is incorporated.
    ▪️Remove pot from heat and stir in the remaining stock, butter, salt and pepper and Parmesan cheese. Garnish with chopped parsley!

    📝DO NOT STEP AWAY FROM STOVE. I cannot stress this enough while you’re making risotto. You will be standing there, furiously stirring for about 30-40 minutes 😂. It’s worth it.
    📝For the spinach, I sautéed two big handfuls in oil, cooking wine, a squeeze of lemon and salt and pepper 😋. I pan seared the pork chops (salt and pepper and a few other seasonings) and made a quick pan sauce with onions and peppers. #tastyshays ⠀⠀

  • My version of the Fresh fig Sabayon. The sabayon is hardly available in most Restaurants today unless they are the classic type. For this recreation I used six egg yolks, Italian Sweet Marsala and dry white French vermouth whipped up and whisked to stiff peaks in a pan over a boiling water bath! Fresh figs marinated with sugar and a touch of Lemon juice are drowned into the Sabayon.

    1 bungkus mie telur
    2 buah telur
    5 siung bawang putih
    7 siung bawang merah
    1 sdm lada
    1 ikat sawi hijau
    Garam secukupnya
    Kecap manis secukupnya
    1 lembar daun bawang
    .
    Cara Membuat :
    1. Haluskan bawang putih, bawang merah, lada, dan garam.
    2. Goreng telur orak arik, lalu sisihkan.
    3. Rebus mie sampai matang, lalu sisihkan juga.
    4. Panaskan minyak goreng secukupnya dalam penggorengan. Masukkan bumbu halus dan tumislah sampai beraroma harum.
    5. Masukkan mie serta kecap manis secukupnya saja sesuai selera.
    6. Masukkan telur orak arik dan potongan sawi untuk sayurannya. Campurkan dengan bumbu, mie, dan kecap sampai merata. Masaklah sampai semua matang. Angkat dan sajikan. Sesuai resep bisa juga menyisakan sedikit air untuk mie tumis kuah.
